Hierher gehören auch tief gefrorene Blöcke aus Filets oder Filetstücken (im Allgemeinen von Kabeljau), auch gemischt mit einer kleinen Menge (nicht mehr als 20 GHT) abgelöster Fleischmasse der gleichen Fischart, die nur zum Ausfüllen der Zwischenräume innerhalb der Blöcke verwendet wird. Die Blöcke sind dafür vorgesehen, in kleinere Stücke (Portionen, Stäbchen usw.) zerlegt zu werden, die sodann für den Einzelverkauf aufgemacht werden.

Der Kabeljau hat einen normalen Trocknungsprozess durchlaufen, bevor er 6 bis 10 Tage lang in kaltem Wasser (bis zu 2 °C) ohne jegliche Zusätze eingelegt wird. Während dieser Zeit werden die Haut und die Gräten entfernt. Nach Abschluss dieses Prozesses werden die Kabeljaufilets vakuumverpackt.
