Erläuterungen zum Harmonisierten System (HS) Kleber wird aus Weizenmehl durch einfaches Trennen von den anderen Bestandteilen des Mehles (Stärke usw.) mittels Wasser gewonnen. Er hat die Form einer mehr oder weniger „zähelastischen Masse“ von weißlicher Farbe (Feuchtkleber) oder die Form eines cremefarbenen Pulvers (Trockenkleber). Er besteht im wesentlichen aus einer Mischung verschiedener Eiweißstoffe, hauptsächlich (85 bis 95 v. H. der insgesamt enthaltenen Eiweißstoffe) Gliadin und Glutenin. Das Vorliegen dieser beiden Eiweißstoffe ist für Weizenkleber kennzeichnend und verleiht ihm, wenn er in entsprechendem Verhältnis mit Wasser vermischt wird, die ihm eigene Elastizität und Plastizität. Kleber wird hauptsächlich zur Eiweißanreicherung von Mehl für die Herstellung bestimmter Backwaren, bestimmter Arten von Teigwaren oder diätetischer Zubereitungen verwendet. …
